Versatile Vegan Quiches Recipe:
Serves: 4(single quiches)

Cook Time: 40 minutes
Ingredients
115g plain flour
60g vegan butter
60g vegan margarine
1/2 tsp mustard powder
1/2 tsp paprika
Pinch of salt
60g vegan cheddar, grated
50ml water
2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water)
75ml coconut cream
Salt and pepper
Veggie fillings of choice (see variants below)
Blend pastry ingredients in a food processor until crumbly, then add water to form a dough. Knead, wrap, and chill for 30 minutes.
Whisk flax eggs, coconut cream, salt, and pepper.
Roll out pastry and line a 9" flan tin.
Preheat oven to 200°C with a baking tray inside.
Add veggies to half-fill the tin, pour egg mixture over, and top with vegan cheese.

Quiche Variations
Spinach & Tofu: Mix 400g drained chopped spinach, 150g silken tofu, and a pinch of nutmeg into the filling.

Leek & Vegan Cheese: Sauté 1 chopped leek with thyme, add to pastry, and top with extra vegan cheese
Leek, Mushroom & Vegan Cheese: As above, plus 6 sliced mushrooms sautéed in vegan butter.
Mediterranean Veggie: Roast 1 courgette, 1 red pepper, and 1 red onion (drizzled with olive oil, salted) at 200°C for 25 minutes, then add.
