Ratatouille Pasta: A Family Favorite

Ratatouille Pasta Recipe:

Ingredients

  • Vegetables

    • 1 large aubergine, cut into 2cm cubes

    • 2 large onions, sliced

    • 2 large courgettes, cut into 2cm cubes

    • 2 red or yellow peppers, roughly diced

    • 4 tbsp olive oil

    • Salt and pepper

  • Tomato Sauce

    • 2 tbsp olive oil

    • 2 cloves garlic, sliced

    • 1 tin chopped tomatoes

    • 4 large ripe tomatoes, roughly chopped

    • 1 bay leaf

    • 1 1/2 tsp dried basil

    • 1 tbsp soy sauce

    • Pinch sugar

    • Salt and pepper

    • 300g dried pasta

Instructions

  • Toss vegetables with olive oil and seasoning in a roasting tin. Bake at 200°C for 1 hour until soft and browned.

  • For the sauce, simmer garlic in oil for 1 minute without browning.

  • Add tinned and fresh tomatoes, bay leaf, and simmer for 40 minutes until reduced. Season with sugar, soy sauce, and salt.

  • Cook pasta per package (8-10 minutes), then drain.
