Ratatouille Pasta Recipe:

Ingredients
Vegetables
1 large aubergine, cut into 2cm cubes
2 large onions, sliced
2 large courgettes, cut into 2cm cubes
2 red or yellow peppers, roughly diced
4 tbsp olive oil
Salt and pepper
Tomato Sauce
2 tbsp olive oil
2 cloves garlic, sliced
1 tin chopped tomatoes
4 large ripe tomatoes, roughly chopped
1 bay leaf
1 1/2 tsp dried basil
1 tbsp soy sauce
Pinch sugar
Salt and pepper
300g dried pasta
Toss vegetables with olive oil and seasoning in a roasting tin. Bake at 200°C for 1 hour until soft and browned.
For the sauce, simmer garlic in oil for 1 minute without browning.
Add tinned and fresh tomatoes, bay leaf, and simmer for 40 minutes until reduced. Season with sugar, soy sauce, and salt.
Cook pasta per package (8-10 minutes), then drain.
